Funsista is a coined term combining "funky" and "fantasista," with the concept being "Trad and Change." It disseminates a new food culture by blending "Warayaki" the traditional cooking method of Tosa (Kochi), which requires simple yet exquisite firing techniques, with free expression unbound by conventional thinking. Explore the innovative dishes of "WARAYAKI funsista," which strive to pursue the various possibilities inherent in the dynamic flames of straw and maximize the potential of ingredients.

WHAT’S STRAW GRILLED? Straw grilling, or "Warayaki," is a technique famous for its use with bonito. It involves not cooking the ingredient thoroughly but rather lightly scorching the surface to impart aroma. This method aims to bring out the full potential of the ingredients, with the smoky aroma of the straw contributing to a complex depth of flavour. It leads the dish to a new level of taste experience.

A craft-inspired atmosphere filled with brick and wood elements. The interior design features a sophisticated blend of brick and wood, creating a craft-inspired ambience. At the open kitchen counter, the flames of straw grilling flicker, allowing guests to witness the handling of ingredients and the chef's expertise up close.
